We made it to another Friday everyone!
This has been a bit of a crazy week here on the Jara side — but looking to the positive it has certainly made the time fly by. I’m looking forward to a quiet evening tonight with the hubby and fur family — then heading to the mountains tomorrow for a short weekend of skiing and meeting up with one of Zach’s old college roommates in Breckenridge. We’re actually really excited and thankful that we’ve been able to take advantage of such great Spring skiing with friends :).
{are you sick of hearing me talk about skiing yet?}
Moving on . . .
With Thursday being my late day — Zach and I got straight to work on dinner by the time we got home.
On the menu last night were open faced sammies on Udi’s sourdough bread with fresh tomato and mozerella cheese.
Delish!
And of course a side salad with all the veggies we had in the house and a homemade garlic vinaigrette. 2 parts oil, 1 part vinegar, and then one clove of garlic. Super easy, and delish. I also used it as a bit of dressing for the sammie as well which worked great, too.
I tried something different and easy last night with a homemade 5 ingredient peanut butter cookie.
- 2 tablespoons of PB
- 2 tablespoons of whole wheat flour
- 1/2 egg white
- 1/2 tablespoon of maple syrup
- 1 bag of mini M&M’s
This actually made a huge cookie so I had to be nice and share a few bites with Zach . . . lucky boy. I’m not normally a huge fan of flour in PB cookies because I think it makes them too cakey — and this one was a BIT cakey, but not bad!
This Morning
My body was still a little sore this morning but thankful that I took it easy with a walking rest day yesterday.
I did my favorite incline and sprint treadmill routine and then added a bit of endurance work on at the end to extend my run a little bit.
Workout of the Morning: 4.12 miles incline/speed work with walking intervals.
Zach commented on how sweaty I was when I got back up to our apartment. I take that as a compliment 🙂
And now — it’s work time folks! 8 hours separates us from the weekend! Woot woot!
Question of the Morning: What are your plans this weekend?
Hope you have a great time skiing! We’re heading to the city to visit my parents….yeah Grammy and Grandaddy time!!! I’m excited to get away for a few days 🙂
Awwe have so much fun! I miss having family close!
That cookie looks delicious and I want to eat it right now. I might give that a go this weekend!
LOL super simple — totally worth it.
Gotta love those single serving cookie recipes! You are a skiing machine, which I think is awesome btw 🙂
lol blame my husband — he’s obsessed.
More skiing??!?! Ahh, I remember what it was like to be a DINC (double income no children). Haha. My weekend probably involves doing taxes. Yuck. But I’m also working with the TV crew for the FC Dallas game, so that’s good!
lol — we’re living it up while we can! But those taxes are looming as well — you want to hint to my husband he should get to work on that?
I’ll hint at him if he’ll do ours as well.
Have fun skiing! I’m excited for you 🙂
thanks hun 🙂
i must be honest in saying yes – i’m sick of hearing/thinking/talking about skiing IN GENERAL! grrr…
lol I appreciate your honesty.
Now, it’s only about 2 hours left until the weekend for me, yahoooo!! Weekend includes low key until Sunday when I’m going to Cleveland for a Cavs game and some Sunday Funday action! TGIF (ps, email me your address, you won some orgaincgirl goods!)
Ahh I’ve been all over the place!! So sorry bout that! I’ll email you now 🙂 ❤
Omg that cookie…want.
lol so good!
Have fun skiing! No I’m not sick of hearing about it- I’m jealous though. And yes, if you’re working out or just finished, someone calling you sweaty is a compliment 😉 NOW, if you hadn’t just finished working out and someone called you sweaty I’d give ’em a hug and say, “Well now you are too!” 😉
This is one of the many reasons I ❤ you twin. Zach is a weirdo and likes when I'm sweaty, I wear.
Looks like you have some fun coming your way this weekend! Those cookies look DELISH. This weekend my in-laws are coming to town! I’m excited to be a tourist in our hometown and do something new.
Thanks!!
