Friday Round Up — Last Week of March

You guys this year is flying by!  It’s already almost April and Spring time is definitely here! ❤

I’m so excited to enjoy another beautiful Spring and Summer here in Denver.  Where the mornings and evenings are always refreshingly cool, and the afternoons are Sunny and hot. 🙂

But, before we get too stuck in Sunny dreamland, let’s recap this week!

I was VERY excited by some new-to-me work outs this week that have left me sore in a way I never experienced before.  Sure, it has hurt my legs enough to make running a bit challenging, but oh man am I loving the burn! 

And for this weekend, I’ve got some slopes to him 🙂 ❤ And possibly another short run, we’ll see how the legs feel.

I’ve loved ending my  nights with cookies and chocolate covered pretzels this week.  YUM!  I think tonight is calling for some GOOD quality dark chocolate and red wine.  Doesn’t that sound amazing?

Goal of the week: Walking Gus at Night

I’m going to go ahead and call this one a semi-win/semi fail.

It’s a semi win because I have gotten Gusman out for a good 20 minute walk at the end of every night.  This has really helped me to move around a bit and speed up that dinner digestion 🙂

I’m going to call it a semi-fail because only one night was it AFTER dessert.  Each night it started getting later and later before I started dessert, and the ol’ boy needed out.  So, we went on our walk and THEN I enjoyed my dinner.

With that said, I did stick to my portioned out dessert, and never once went back for more.  So that in itself is a semi-win, right?

This is something I want to KEEP working on — especially as the weather gets nicer and the days get longer.

Another Ski Weekend On the Books

We made it to another Friday everyone!

This has been a bit of a crazy week here on the Jara side — but looking to the positive it has certainly made the time fly by.   I’m looking forward to a quiet evening tonight with the hubby and fur family — then heading to the mountains tomorrow for a short weekend of skiing and meeting up with one of Zach’s old college roommates in Breckenridge.  We’re actually really excited and thankful that we’ve been able to take advantage of such great Spring skiing with friends :).

Moving on . . .

With Thursday being my late day — Zach and I got straight to work on dinner by the time we got home.

On the menu last night were open faced sammies on Udi’s sourdough bread with fresh tomato and mozerella cheese.

And of course a side salad with all the veggies we had in the house and a homemade garlic vinaigrette.   2 parts oil, 1 part vinegar, and then one clove of garlic.  Super easy, and delish.  I also used it as a bit of dressing for the sammie as well which worked great, too.

I tried something different and easy last night with a homemade 5 ingredient peanut butter cookie.

  • 2 tablespoons of PB
  • 2 tablespoons of whole wheat flour
  • 1/2 egg white
  • 1/2 tablespoon of maple syrup
  • 1 bag of mini M&M’s

This actually made a huge cookie so I had to be nice and share a few bites with Zach . . . lucky boy.  I’m not normally a huge fan of flour in PB cookies because I think it makes them too cakey — and this one was a BIT cakey, but not bad!

This Morning

My body was still a little sore this morning but thankful that I took it easy with a walking rest day yesterday.

I did my favorite incline and sprint treadmill routine and then added a bit of endurance work on at the end to extend my run a little bit.

Workout of the Morning: 4.12 miles incline/speed work with walking intervals.

Zach commented on how sweaty I was when I got back up to our apartment.  I take that as a compliment 🙂

And now — it’s work time folks!  8 hours separates us from the weekend! Woot woot!
