Favorite Run
I’m digging working on speed this week. Shorter distance, faster speeds = short, challenging runs. I am liking that. But I’m hopeful that Zach and I get out for a run together this weekend, so that will probably be the highlight run of the week.

I got this AMAZING, huge, gluten free cookie from Vitamin Cottage yesterday as a treat to myself after a super long day…but totally forgot to take a picture. Bad blogger. Maybe I’ll go get myself another for tonight, JUST so you guys know what they look like!
Favorite Eat
Shockingly enough, taco night wins this week. Everything worked REALLY well together in this dish. The tortillas are our favorites, the sausage was super flavorful, and the veggies has the perfect char. Yum.

Your pictures are making me hungry just looking at them! I am a huge fan of anything pumpkin. I had a pumpkin scone this morning, and it was delicious. It was even whole wheat, so not too bad, right?!

I guess my fave was my run this morning. I got in my 17 miler before work and felt pretty good doing it!

What was in those sausage tacos? And what type of sausage did you use? They looked so good! I’m going to have to make some. Yum.
It was from Uber Sausage, a small place near us in Denver. But one was spicy and one was Italian I think. They were just left over and frozen so we used them!

We just used half a large white onion, anaheim pepper, green pepper, and sauteed them off in a cast iron skillet. then when they were cooked a bit, added the precooked sausage to the pan. Which definitely helped to flavor everything up!

I wish there was a TJ’s around here. 😦 I would be there ALL the time. I still have their flax seed and coconut oil from there from when I lived in Chicago though. Have a nice Friday

I’m obsessed with TJ’s but the closest one is almost 2 hrs away-major sad face! Your eats did look delish & taco night was my best night too. Speaking if which, I use the TJ’S brand of taco seasoning & it’s great!

What a wonderful name for a store – ‘Vitamin Cottage.’ I’m with you on the Halloween candy. I’ve taken it on as a personal duty to empty that bowl and return it to the cupboard.
