Good Morning and Happy Friday All 🙂
Last night ended with Zach and I enjoying the last of the cheesecake for dessert while I blogged and he started the “in and out of sleep” process.
I must say, I was pretty impressed. He made it until 10, and had been up since 230 AM MST. Needless to say he is exhausted and will hopefully catch up on some much needed rest tonight.
I forgot last night…
I posted pictures of our dinner, but didn’t put any kind of recipe with it.
Beautiful Homemade Salad:
1 head of rainbow chard
1/2 large yellow pepper
1 cup garden cherry tomatoes
1 bunch of garden basil
1/2 orange carrot (steamed)
1/2 purple carrot (steamed)
1/2 white carrot (steamed)
1 yellow beat (steamed)
lots of ground salt to taste
2 tablespoons EVOO
1 tablespoon vinegar
1 tablespoon of spicy mustard
I chopped up the chard, and then put half of the dressing directly on it and put it back in the fridge to set. I then started working on all of the other veggies, including getting the carrots and beat into the steamer to cook through. Once everything was chopped and prepared, I put it all in the large salad bowl and tossed it together, adding a little more dressing and hot sauce to my own personal taste 🙂
The salmon that I had on top of my salad was just a frozen piece that required 22-24 minutes at 375 in the oven. I’m not going to mention the brand as they were not very good to be honest.
Zach grilled his bison on our large George Foreman for about 10 minutes and just like that, everything was ready.
This morning, thanks to it being my rest day, and thanks to Zach being amazing and taking Gus duties, I was able to sleep in until 720. Glorious.
I always feel a little anxious about rest days, as I don’t burn out that energy working out, but man the sleeping in part sure is nice :).
So now it’s work until 5 — then date night tonight! We haven’t chosen our location yet, but I’m excited to get out with my favorite boy 🙂
