Weekly Food and Workout Round Up August 9, 2013

Good Morning and HAPPY FRIDAY EVERYONE ūüôā

Since Friday’s are generally my rest days, and the lead in to the weekend, I figured I could use Friday mornings as my time to recap the highlights, and lowlights, of my food and work outs for the week.

Since food is my favorite, let’s start with that.


Food Highlights

Homemade Pizza, and last nights tomato and moz salad. The warm, flavorful pizza went perfectly with the fresh, cool salad!

Favorite Snacks



Homemade Chocolate Chip Cookies.  They were our treat through the week and they were AMAZING



My first shot at¬†Peanut Butter Granola¬†. ¬†Unfortunately I’m finishing it off as we speak.

I got this scone yesterday as a quick breakfast after our final walk through, and honestly didn’t even eat a quarter of it. ¬†It’s from Starbucks, and there were honestly probably 4 blueberries in the whole thing. ¬†Total Disappointment.



They were out of my favorite Wallaby granola this morning, so I had to go back to my yoplait, sugar bomb unfortunately. ¬†Really doesn’t taste bad, just does nothing for my hunger.


I’m hungry just looking at all that. YUM.


Workouts for the Week

I was able to stay pretty darn true to my workouts for the week this week, as planned, which always makes me feel good ūüôā

  • Monday’s outdoor run – 5.7 miles
  • Tuesday’s strength day
  • Wednesday’s Speed treadmill run – 4.76 miles
  • Thursday’s 60 minute stationary bike ride (20 miles)

Pretty good! ¬†Today is my rest day, and then tomorrow I have a 90 minute run planned. ¬†As always, I’m a bit anxious for it, but hopeful that I can push through ūüôā ¬†I had some strong work outs this week, so I’m happy about that!

Swooning over Juan Pablo

Good morning!

We spent the bulk of the evening enjoying chocolate chip cookies and struggling to watch the Bachelorette ¬†finale. ¬† I absolutely adore Chris and think she ended up with a good guy, I just wasn’t a huge fan of Des this season. ¬†She seemed very naive, and I lost a bit of respect for the way things went down after Brooks left.

That doesn’t take away from the most exciting part of that whole series though: JUAN PABLO IS THE NEXT BACHELOR!


I guess I will be stuck watching a third season of Bachelor. . . swooning over Mr. Pablo.  With Zach. Swooning.

Moving on…

This mornings workout was strength based:

Workout of the Day

This video¬†of strength training for runners, done 3 times (it’s about 20 minutes long)

It was really nice to not have to think and just be instructed what to do on my workout. ¬†I miss the class settings that you have in real gyms, but I just can’t justify spending on the money on a membership when I have what I need at my apartment.

This Morning

The rest of the morning was pretty standard, get showered, ready, and to work.

More excited were today’s (and yesterday’s for that matter) breakfasts and snacks


Yum! ¬†I have a new flavor for today, Strawberry and Creme. And of course…


I can’t keep my grubby little hands out of that Peanut Butter Granola. YUM!

(Notice I said breakfast AND snacks…seriously I can’t stop).


I have plans tonight to head to a friend’s for a small girls night of appetizers, dinner, desserts and wine. ¬†Looking forward to it! I never have enough girls nights ūüôā

Question of the Day:  Is there a snack that you have that you seriously cannot STOP eating once you start?

For me, it’s granola, or any yummy cereal, trail mix, chips, or any chocolate/sweets.

Peanut Butter Granola

Today I took my first stab at something I’ve been wanting to do for a very long time


Homemade granola!

I wanted my first trip down homemade granola to be easy and with few ingredients, so I went straight to the experts. ¬†I based my recipe off one I found on the website of the amazing Julie at pbfingers.com (If you haven’t yet, check her out, she’s awesome).

The granola was based off of the recipe from this page: http://www.pbfingers.com/2011/06/14/peanut-butter-granola/

I did make some changes, based both of preference and what I had on hand, and let me tell you, it turned out pretty awesome.

Peanut Butter Granola


  • 2 cups of oats
  • 4 tablespoons of peanut butter (I used honey roasted peanut butter)
  • 4 table spoons of maple syrup
  • 1/2 teaspoon of vanilla extract
  • 1/2 teaspoon of cinnamon


  • Spray a cookie sheet and preheat oven to 325
  • Combine peanut butter and maple syrup and heat them up (I used the microwave for 20 seconds)
  • Stir that up (I used a fork to get through the PB) and add the vanilla and cinnamon to mix
  • Add all the wet ingredients together with the oats evenly (I used my hands a lot to get it through the oats)
  • Spread evenly on a cookie sheet and bake for 14-15 minutes, or oats start to turn a little brown.


The only change I may make is adding a bit of the maple syrup at the end (either adding extra or just saving some until it’s laid out on the cookie sheet) to make it a little more wet, just so it combines better. ¬†But I must say, the taste is spot on!

I absolutely enjoyed some of this hot from the oven, and cant wait to enjoy it through out the week. Hopefully it lasts!
