Today is one of those winter days here in Denver that I am reminded of another reason we moved here. Sure it’s in the 4o’s …but the sun is shining, the windows are open and my parents and I are enjoying a beautiful afternoon.
Zach left this morning and is on his first flight of a long day of travel. 12 hours plus to Tokyo, followed by another jaunt to Singapore. Thank god that boy is a strong cookie and has a great attitude about the trip.
Before he left Zach and I were able to enjoy a nice dinner with my parents last night.
Zengo is an Asian fusion restaurant near out apartment that Zach has been on business but I’ve been dying to try. Visiting parents was the perfect opportunity to do just that :).
We started the meal with amazing empanadas and a sushi roll.
And then I ordered a tuna salad for entree.
Two bottles of wine and one margarita (for Zach) later we left dinner happy and full.
My parents and I dropped Zach off at DIA then spent the late morning and afternoon in Boulder. We stopped by one of my favorite spots for brunch, Salt.
I enjoyed some coffee and the quiche of the day that included sausage and fennel. Very very delish.
I did manage to fit in a very easy, first real run since Europe and my flu.
Three miles that didn’t test my stomach at all but had me feeling like I’ve never run before in my life. I definitely survived but let’s just say I’m not planning on another run tomorrow.
Now it’s time to relax with the family for a bit watching the last bit of Olympics. I hope you all are having a great weekend!
