2 A Day Hubby Made Lasagna And MORE Christmas Treats

Anybody else having a good day?

Today was very laid back at work, which always puts me in a good mood.  And on top of it, I think I have finally rehydrated myself.   I have been vigilant about getting copious amounts of H2O the past couple of days and the perpetual exhaustion, fatigue and minor head ache that I’ve been dealing with is officially gone.  YAY!

I even went for a second run tonight because Zach was working when I got home and I didn’t want to bug him…and I felt good so I was inspired.

Workout of the Evening: 3 miles, speed work

  • 10 minute progressive warm up (6.2-7.0)
  • 10 minutes of intervals, 1 minute at 8.0, 1 minute at 6.0
  • finished up randomly until hitting 3 miles right after 26 minutes.

I ended the run still feeling great and SO thankful to be feeling strong.

Why I Built Up an Appetite

Yes…need I say more?  While I was at work today Zach pulled out the stops and prepared a HUGE lasagna for us for dinner tonight.

Seriously, we will be eating lasagna for weeks.  And I am A-OK with that.  I’ll ask Zach for a recipe and have it back to you guys ASAP!

And of course…because my work friends are so sweet and want to fatten me up, I brought home a TON of Christmas goodies for us to cap off the night with.

I would absolutely run 2 a days ANYDAY to find my second stomach for all this deliciousness.

WIAW – What I Ate Wednesday SKI Edition

Did you all notice some small changes around the ol’ blog? 🙂  I was busy this morning making a few visual changes to the page, and so far I am loving it!

Moving on to business. . . Happy WIAW day! 🙂 My favorite.  Come on, a day where everyone posts their best eats?  Love it!  As always, thanks to Jenn for hosting! 🙂

Breakfasts

For the trip up the mountain, Zach and I stopped at Starbuck’s and split a Spinach and Egg White wrap and Cranberry bliss bar.  Ultimate ski fuel 🙂  Great mix of healthy stuff, with fun delicious treats that you can burn off on your big ski day.

For Sunday, Zach and I stopped at a little Creperie in Winter Park and enjoyed muffins and a breakfast crepe.  The muffins were blueberry and carrot cake (we actually saved most of the carrot cake for the ride home).  The breakfast crepe, destroyed before pictures could be taken, was bacon egg and cheese in a GREAT crepe wrap.  I left this meal feeling a little overly full, but nothing 3 or 4 hours on the mountain couldn’t handle.

These are all old pictures, but we snacked on a BUNCH of trail mix, chips and beer when we got down from the slopes.  Our breakfasts were enough to tide us through the day, but by the time we got to our room at 4 we were starving.  GIVE US SNACKS!

We went to the little tavern in the hotel Saturday night, where I enjoyed a Greek salad (undressed, apparently they don’t need it!) and red wine.  Perfect way to wrap up the ski day.  And on Sunday when we got home, our ONLY dinner option was our favorite option: PIZZA! 🙂  Of course!

When you ski hard for 2 days, you deserve a treat right?  Hello delicious PB cup split by Zach and I (mainly me…).

Gotta Be Flexible

For those of you that know me, it probably comes as no surprise that I am a bit of a control freak.  I like to have things planned, I work well with a schedule, and I’m not always flexible.  That’s not to say I’m not laid back — I can absolutely go with the flow once things are going, and I can make the best of many situations.  But my overall tendency is absolutely Type-A all-the-way.

Well last night our plans for lasagna got washed.  We had some last minute very important errands to run out in Boulder, so thankfully we were able to be flexible and have an impromptu, a little abnormal date night.

In the middle of our errands in Boulder, Zach and I made a stop at Fate Brewing Company for dinner and a nice cold drink to take the edge off :).

We got to Fate about 620 PM, and to our surprise there was a 30 minute wait.   Boulder is a college town, and the students are off for break, not to mention we were eating with our senior citizen crowd.  So when we heard there was a 30 minute wait, while we hadn’t PLANNED on waiting, we figured it had to be a good sign.

We sat at the bar and both got beers.  I got a Chocolate Peppermint Stout that was AWESOME and unique, and Zach shockingly got an IPA ;).

There draft menu was quite impressive, with a lot of their own brews along with other local breweries.  While their bartending service was subpar (we had 2 people come tell us they would help us, and then go help other crowds), the beer was delicious!

Right around 25 minutes later, we were seated and the service improved.  We were quickly greated by our waitress, put in our orders, and our food was out promptly.  I love it 🙂

I ordered the farmers market salad with brisket (when in Rome, right?) and it was DELICIOUS.  The brisket was PERFECT, the snap peas, beats, cucumbers, pickles, everything…it was a great mix.  And then with the stout dressing?  YUM!

We were able to finish our errands and got back home to Denver a little after 9 PM.   I apologize for my lack of posting, but we’re all about flexibility, right?  By the time we got home, we were both pretty exhausted.  Ate dessert (more cookies) and crashed.

This Morning

Thanks to my early-to-bed time, I was able to get out of bed without TOO much problem this morning for a quick speed work out.

Workout of the Day: 4 miles speed work out

  • 10 minute steady easy warm up
  • 20 minute intervals:  1 minute @ 8 mph, 1 minute at 6 mph
  • finish off the run steady until 4 miles right around 35 minutes

My brain was a bit foggy, but my legs felt good so I pushed out the constantly changing speed workout to keep it interesting.  Thankfully, the run flew by.

Work time now, folks :).  It should be a quiet day, lots of meetings but no clients.  Love it! 🙂
