Delicious, Nutritious, Garbage Dinner

Anybody do a home work out after this afternoon’s post?  I love how many people responded to the idea of free, accessible exercise.  ‘Tis the season, right?

I squeezed in 45 minute Full body hatha yoga and 8 minute abs.   Great way to stretch out and unwind for my rest day.

Garbage Dinner

Ever since Zach and I have lived together, we have a few “garbage meals.”  A garbage meal is really any meal that you can throw left over produce, or really ANY food into a bowl or plate.  Some of our favorite ways to do garbage meals include:

  • egg dishes
  • salads
  • pizzas

Tonight garbage meal turned out GREAT!  A meal of left over produce and grain!

Warm Winter Roasted Salad with Quinoa

Ingredients

  • 1 head of broccoli
  • A dozen or so baby carrots + 2 medium yellow carrots
  • 1 green pepper
  • mixed greens (we used romaine, rainbow chard and spinach that we had left over)
  • 1/2 cup of quinoa (dry)
  • 4 mini heirloom tomatoes
  • leftover 1/2 steamed beet
  • lemon juice
  • siracha
  • salt and pepper
  • your desired dressing

Directions

  • Preheat oven to 350
  • Cut up the veggies

  • Put veggies in oven (roast for 30-45 minuts total)
  • Prepare the quinoa (1:2 ratio.  1/2 cup quinoa, 1 cup water.  Put on high until boil, then lower heat to a simmer until no excess water. About 12-15 minutes)

  • Clean, and cut your greens.  Put desired amount into bowl
  • Dress with a squeeze of lemon juice, squeeze of sriracha, and salt and pepper to taste
  • Mix the greens and set to the side

  • When the veggies are done, let cool for a minute.
  • Add quinoa directly on top of the greens
  • Add the roasted veggies on top of the mixture
  • Dress as desired and mix.

The great thing about garbage meals is they really can be whatever you have available.  Because if you have it, it’s likely you enjoy it, right?

  1. Oh my gosh… delicious! I would say “garbage” meals are pretty great sometimes and I have been known to do my fair share. I love taking a random variety of leftovers and other things that need to be used up and see what I can make from them. 🙂

  2. When I studied abroad, the Spanish family had what I thought was a garbage lunch- hot dog, rice, fried egg and ham. So random, right? Then we had it the next week, and the next and every week until I left. I guess it wasn’t such a garbage lunch after all, it was a legit lunch we got once a week!

  4. I do “garbage” meals ALL THE TIME! I do the same thing, whatever is left in the fridge that I need to use up, it all goes in to a meal. Usually I just saute (spelling?) veggies and put it with pasta, couscous or quinoa! But yes, I have a lot of garbage meals.
