Delicious, Nutritious, Garbage Dinner

Anybody do a home work out after this afternoon’s post?  I love how many people responded to the idea of free, accessible exercise.  ‘Tis the season, right?

I squeezed in 45 minute Full body hatha yoga and 8 minute abs.   Great way to stretch out and unwind for my rest day.

Garbage Dinner


Ever since Zach and I have lived together, we have a few “garbage meals.”  A garbage meal is really any meal that you can throw left over produce, or really ANY food into a bowl or plate.  Some of our favorite ways to do garbage meals include:

  • egg dishes
  • salads
  • pizzas

Tonight garbage meal turned out GREAT!  A meal of left over produce and grain!

Warm Winter Roasted Salad with Quinoa


  • 1 head of broccoli
  • A dozen or so baby carrots + 2 medium yellow carrots
  • 1 green pepper
  • mixed greens (we used romaine, rainbow chard and spinach that we had left over)
  • 1/2 cup of quinoa (dry)
  • 4 mini heirloom tomatoes
  • leftover 1/2 steamed beet
  • lemon juice
  • siracha
  • salt and pepper
  • your desired dressing


  • Preheat oven to 350
  • Cut up the veggies


  • Put veggies in oven (roast for 30-45 minuts total)
  • Prepare the quinoa (1:2 ratio.  1/2 cup quinoa, 1 cup water.  Put on high until boil, then lower heat to a simmer until no excess water. About 12-15 minutes)


  • Clean, and cut your greens.  Put desired amount into bowl
  • Dress with a squeeze of lemon juice, squeeze of sriracha, and salt and pepper to taste
  • Mix the greens and set to the side



  • When the veggies are done, let cool for a minute.
  • Add quinoa directly on top of the greens
  • Add the roasted veggies on top of the mixture
  • Dress as desired and mix.

The great thing about garbage meals is they really can be whatever you have available.  Because if you have it, it’s likely you enjoy it, right?

This afternoon’s post is one I’ve actually been MEANING to do for awhile!

So many of my bloggy friends here ask and talk about videos to buy, workouts you can do at home, or recommendations for cheap work outs.  Welp, I’m here to share with you all my FREE work out recommendations!

While our apartment gym was closed, I found myself doing a ton of workouts from home.  This includes yoga and strength, all for free on youtube!  Doesn’t get any better than that, does it?

So, I’m here today to share with you all my favorite FREE YouTube work outs!



I can’t recommend Tara Stiles enough. . . just look her up on YouTube for more videos.  She has a TON of short, focused, routines 8-12 minutes long.

Good Morning Rest…Monday

What a random weekend that was . . .  between locking my keys in my car, almost losing my wallet, and having my pup almost eat us out of house and home, the weekend was a bit off.

But that doesn’t mean it was without it’s highlights!

With that said, I am ready to tackle this new week :).

I started last week with my rest day, and I actually REALLY think that worked well for my body.  While I LOVE starting out the week with a good work out, sometimes it’s nice to be able to look forward to sleeping in, relaxing, and slowly starting your week after a GOOD workout Sunday.

Which is exactly what I did.

Rest this AM, but I do have some planned YOGA for the PM.  I haven’t done a dedicated yoga session in a little while, and I think my body will thank me 🙂


What a lucky girl I am, I even had a husband who made me some delicious oatmeal.  It includes:

  • milk
  • maple syrup
  • blueberries
  • flax seed

And of course, I added some dried fruit (peaches and apples) to it. . . I LOVE dried fruit with hot oatmeal!

With a rest day today, I plan to eat healthy and well, let my body reboot, and then dive into a good week of runs and work outs.

Workout Plan For The Week

  • Monday- YOGA
  • Tuesday – 4 Mile speed Am/POSSIBLE PM 3 miles easy
  • Wednesday – 4 miles easy
  • Thursday: 5-6 miles easy pace
  • Friday – 4 miles
  • Saturday – 2 miles/SKI
  • Sunday – SKI – possible PM run

Zach and I are planning on staying in Winter Park for the weekend, so I want to focus my energy on skiing and not running for the time being.  With that said, you never know where you can squeeze a few miles in ;).

And just like that, it’s time for work.  Have a great Monday morning everyone!
